Leave it to the good Doctor Eric to once again develop a non-dairy recipe for a traditional dairy staple. How dull life would be if we couldn’t eat our favorite dishes because they contain dairy products. Mango lassi, a centuries-old favorite in India and Bangladesh, is usually made with yogurt and milk. Here it is reinvented without any dairy at all, and you won’t miss it. This recipe is so good that someone blurted out upon tasting it, “This is heaven on earth,” so I’ve adopted that as part of the name. Try it and see for yourself!

Heaven on Earth Non-Dairy Mango Lassi

Ingredients

  • 3 cups frozen chopped mango
  • ½ cup coconut yogurt recommend Cocojune
  • ¾ cup coconut or almond milk
  • 1 dropperful stevia or to taste recommend Trader Joe's brand
  • 4 mint leaves (optional)
  • dash ground cardamom (on top)
  • ½ frozen banana (optional)

Instructions

  • Put mango, coconut yogurt, coconut (or almond) milk, and stevia in a high-speed blender and process until smooth.
  • Pour into glasses. Optional: Sprinkle cardamom on top and add a mint leaf.
  • Optional: Some like to use half a frozen banana to make it thicker.
