I first discovered this delightful salad when I was invited to a friend’s dinner, and they graciously served it. It was so delicious that I couldn’t resist asking for the recipe! After making a few tweaks to incorporate some more of my favorite items, I’m excited to share it with you. I encourage you to also customize it to suit your exact taste.
Asian Fusion Cabbage Slaw Crunch Medley
Servings 4
Ingredients
Slaw.
- 1 pound shredded purple and green napa cabbage, combined with shredded carrots. can purchase this mix at Trader Joe's or prepare your own
- 12 ounces snow peas, thinly sliced with strings removed.
- ⅛ cup combination of thinly sliced red, yellow, and orange bell peppers.
- ¼ cup thinly sliced radishes.
- 1¼ cups green onions, thinly sliced (including green tops).
- 1¼ cups chopped fresh cilantro.
- ⅔ cup slivered toasted almonds.
- ¼ cup Mandarin orange segments, cut into small pieces.
Dressing.
- 4 tablespoons white or red wine vinegar.
- 1½ to 2 tablespoons low-sodium soy sauce. to taste
- 1 clove garlic, pressed.
- ½ teaspoon sesame or olive oil. traditionally, sesame oil is used, but I prefer using olive oil for its health benefits, and it's still delicious!
- ½ teaspoon ground powdered ginger.
- ¼ teaspoon cayenne pepper.
- ¾ cup mayonnaise or greek yogurt.
Instructions
Slaw.
- Combine all ingredients in a large bowl and gently mix them together.
- Set the mixture aside while you prepare the dressing.
Dressing.
- In a separate bowl, whisk together all the dressing ingredients.
- Taste the dressing and adjust he flavors to your liking by adding more of any ingredient.
Final Assembly.
- Pour the dressing over the slaw mixture.
- Thoroughly but gently mix everything together, ensuring all the ingredients are evenly coated.
