Easy Classic Homemade Horseradish

Equipment

  • 1 Food Processor or strong blender (I use Vitamix)

Ingredients

  • 1 fresh horseradish root, chopped into ½ to 1 inch pieces
  • 2 to 3 tablespoons water
  • 1 to 2 tablespoons white vinegar
  • 1 pinch salt
  • ¼ cup fresh beet, cut into quarters (optional for a milder, sweeter flavor)

Instructions

  • Start by peeling the horseradish root and chopping it into ½ to 1-inch pieces.
  • Place the chopped horseradish into a food processor or a high-powered blender like Vitamix.
  • Add 2 tablespoons of water to help with the blending process. (Keep the other tablespoon of water aside in case you need it.)
  • Grind the horseradish in the blender or pulse it in the food processor to mince it.
  • Once the horseradish is finely minced, add a pinch of salt and continue mixing to incorporate it evenly. If the mixture is too thick and not blending well, you can add the remaining 1 tablespoon of water and continue grinding or mincing until you achieve your desired texture.
  • At this point, the horseradish will be very potent and strong. If you prefer a milder and slightly sweeter horseradish, you can add the optional ¼ beet to the mixture and grind to desired consistency.
  • Add 1 to 2 tablespoons of white vinegar and blend for a few seconds until it's thoroughly blended into the mixture. If the mixture is too watery at this point, you can strain out any excess liquid.
  • Transfer the prepared horseradish to a container or jar for storage.
