I was delighted when I opened the refrigerator and discovered leftover chicken filling the day after making Traditional Chicken Bastilla. The mixture contained all the wonderful spices–saffron, turmeric, cinnamon, and more–and the flavors were enhanced overnight. With all the hard work behind me, I was inspired to make a simple chicken salad with the filling. The result was the recipe below–an entirely different meal with a delicious creaminess. I made it in five minutes and got five stars from my son!
Surprise Leftover Moroccan Shredded Chicken Salad
Ingredients
- 1 cup leftover shredded chicken from Moroccan Bastilla chicken mixture
- ½ cup creme fraiche
- 3-4 tablespoons raisins can soak in rum or bourbon (optional)
- rum or bourbon, enough to cover raisins for soaking (optional)
Instructions
- Optional: Cover raisins with rum or bourbon in small bowl. Soak for at least 15 minutes until raisins are plumped and have absorbed some flavor. If not soaking in rum or bourbon, go straight to next step.
- Place chicken shreds in separate bowl. Add creme fraiche and raisins. Mix well so chicken is thoroughly coated.
Notes
This salad invites creativity. You can add other items to the chicken salad such as chopped almonds or diced celery. I placed a scoop of the chicken mixture on a bed lettuce, tomato, and avocado. Then I sprinkled it with slivered almonds, drizzled wine vinegar and olive oil on top of the vegetables, and had an incredibly tasty meal.
