From the story: Beginner’s Love. 

I created this recipe to be super simple and super delicious. Cherry tomatoes can be substituted for sliced tomatoes and served in an avocado half as a “boat,” along with the other ingredients. 

Addictive Avocado Surprise Salad

Ingredients

  • 1 medium Hass avocado
  • 1 medium fresh tomato, sliced
  • 2 tablespoons feta cheese, crumbled to taste
  • ½ teaspoon raw pignolias (pine nuts) available at Trader Joe's
  • 1 drizzle cold-pressed 100% olive oil to taste
  • 3 drizzles apple cider vinegar or wine vinegar to taste
  • 1 drizzle balsamic vinegar to taste
  • 2 dashes Himalayan sea salt to taste
  • 1 dash pepper (optional) to taste
  • 1 dash sumac (optional) to taste

Instructions

  • Wash tomato and avocado. Put on paper towel to dry. Slice tomato into medium-thick slices and lay on plate. Drizzle with a drop of apple cider vinegar or wine vinegar. Sprinkle with a dash of salt.
  • Cut the avocado in half. With spoon, scoop out entire half and place it on top of tomato with rounded side up. Drizzle avocado with a little apple cider vinegar or wine vinegar and follow with a tiny sprinkle of salt.
  • Evenly pour more apple cider vinegar or wine vinegar on top so that the amount to your liking flows down over all ingredients.
  • Evenly pour olive oil on top.
  • Add sumac. (optional)
  • Sprinkle feta cheese over entire dish.
  • Sprinkle pine nuts on top.
  • Drizzle balsamic vinegar over entire top.

Notes

The trick to making this a truly luxurious and addictive dish is using the finest olive oils and vinegars. This dish is so easy that you can create it in a pinch. It's my go-to when I'm too tired to cook or wash lettuce. It's filling enough to satisfy me as a small meal, and if I'm really hungry, I can eat one after another like candy!
